BRAZILIAN FISH MOQUECA
(Variations possiblle: Praws Moqueca, Vegetarian Moqueca etc)
Ingredients
1kg of (fish name) on thick pieces
1 cup Dende Oil
3 garlic chopped cloves
1 cup lemon juice
1/2 cup veg oil
1 cup parsley
1 cup shallots
1 large onion sliced
2 large tomatoes sliced
1 green capsicum sliced
1 red capsicum sliced
1 cup coconut milk

Directions
Heat the vegetable oil on a large cooking pot & fry the onion. Add a little dende oil to the onion when frying for extra flavour. Dip the fish pieces in a mixture of lemon juice and garlic before placing them in the heated pan. Heat the fish in the pan for 1-2 minutes depending on piece sizes, turn the fish over and add the parsley, shallots, tomatoes, red & green capsicums. Cover with a lid and let it cook for 5 min then add the Cepera Dende Oil and coconut milk. Cook for another 5 minutes then enjoy your authentic Brazilian Moqueca.
