Vegan Canjica

1 cup Canjica corn
2 liters of water
4 cloves
2 cinnamon sticks
1 cup of a vegetable milk (rice milk, soy ilk, oats milk etc)
200 m coconut milk
3/4 cup shredded coconut
1 pinch of salt
Brown sugar as you like
Grounded cinnamon

Cook the canjica in a pressure cooker with the water, cinnamon stick and cloves for around 1 hr. Drain the liquid but keep 1 cup of it. Remove the cloves and cinnamon sticks. In a cooking pot mix the cooked canjica., vegetable milk, coconut milk, shredded coconut, sugar and pinch of salt till it gets thicker. Sprinkle cinnamon and serve hot or cold.
