Xmas Farofa
Ingredients 500gm raw Cassava Flour Yoki 200gm bacon cubes 200gm Chorizo’s 4 eggs 1 can of corn 200gm pitted black olives 200gm pitted green olives 200gm pitted prunes 200gm sultunas 1 medium onion chopped 1 garlic clove chopped 4 Tspoons butter 80 ml vegetable oil Pepper Salt Parsley |

Directions
In a large fry pan place the oil and the chorizo’s, add bacon. Set chorizo’s and bacon aside. On the same pan add the onion, garlic than the eggs. Stir for a bit. Add salt and pepper. Mix the cassava four and 2 spoons of butter stiring till the flur is cooked. Add the fried chorozo’s and bacon. Mix the prunes adding the remaining 2 spoons of butterl. Add the corn, sultunas, green olives and blac olives. Taste to adjust sasoning. Garnish with parsley.
