Hand picked grapes in boxes of 20 kg from the best vineyard of Miolo family, the Lot 43. The grapes were selected by hand on a selection conveyor, machine destemmed and gently crushed. Alcoholic fermentation and maceration in stainless steel tanks at a temperature from 28 to 30°C during approximately 15 days with simultaneous pigeages and pumping over the must for maximum extraction. Maceration after fermentation for 15 to 20 days . Complete and spontaneous malolactic fermentation. The Cabernet and Merlot wines were aged separately, 50% in new american oak and 50% in new french oak barrels. The wine was bottled without filtration and aged in our cellars for 1 more year.
